  1. Preheat oven to 350F.
  2. Mix all dry ingredients in a large mixing bowl.
  3. Add melted coconut oil, maple syrup, pumpkin puree and vanilla extract.
  4. Mix everything together thoroughly.
  5. Bake for 40-45 minutes, stirring half way through.
  6. Let cool for 10-15 minutes, then enjoy with milk, yogurt, on your smoothie or by itself.
