Pumpkin spice is one of those flavors that social media, coffee shops and food brands alike obsess over for a good 2 months during fall.

I know, because I’m right there with them making pumpkin spice everythanggg.

In my world, pumpkin spice is in season ALL year round. My taste buds don’t discriminate when it comes to pumpkin goodness.

This Pumpkin Spice Protein Granola is full of healthy fats, protein, fiber and cell-protecting antioxidants. I love it by itself, on yogurt, with a little almond milk or atop a smoothie.

  1. Preheat oven to 350F.
  2. Mix all dry ingredients in a large mixing bowl.
  3. Add melted coconut oil, maple syrup, pumpkin puree and vanilla extract.
  4. Mix everything together thoroughly.
  5. Bake for 40-45 minutes, stirring half way through.
  6. Let cool for 10-15 minutes, then enjoy with milk, yogurt, on your smoothie or by itself.
