I am ALL about simple meals that take less than 5 minutes to throw together. This is especially true when I have a busy week ahead of me, and won’t have time to prepare a full breakfast.
Rather than reaching for a sugary granola bar, swinging through the Micky D’s drive thru or skipping breakfast all together, try my overnight oats recipe below.
You can prep several of these on a Sunday evening for the whole week, leave them in the refrigerator, and grab them as you run out the door in the morning. I like to prep them for myself and my husband.

Super Simple Overnight Oats
1/2 cup oats
1/4 cup yogurt (optional)
1/2 cup almond milk (any milk works)
1 tbsp chia seeds
dash of cinnamon
pinch of salt
sweetener of choice (I like liquid stevia, maple syrup or honey)
Optional toppings: fruits (I LOVE banana or berries on my overnight oats), nuts, seeds (like flax seeds, sunflower seeds, pumpkin seeds, etc), nut butter
How to do it
1. Add all ingredients into a mason jar/tupperware and mix together.
2. Place jar in refrigerator overnight (or for at least a few hours to allow the oats to soften).
3. When you’re ready to eat the oats, add a splash more almond milk (this is my SECRET!) and top with any of your desired toppings (my fave = banana).
